Roasted Sweet Potatoes

The best way to warm up my cold and lonely kitchen is to bake and cook!
chop unpeeled sweet potatoes
red onions cut into wedges
olive oil
balsamic vinegar
kosher salt and ground black pepper to taste
I like to add Cajun spice and Adobo seasoning and fresh garlic
Directions
Preheat oven to 450 degrees F.
Mix cubed sweet potatoes, red onion, and spices in a bowl. Drizzle olive oil over the mixture and toss to coat; pour into a shallow cast iron skillet, stirring frequently, until the vegetables are soft and golden brown. (optional) Drizzle balsamic vinegar over the vegetables.
