I love pancakes so much they are like my own form of currency. They are more portable than a sandwich. Historically many must have felt this way with the johnnycake 'journey cake' and the oatcake. The secret to my pancakes is a whole grain blend of flours; oat, buckwheat, wheat, corn and low fat buttermilk. I get teased all the time because I always carry FOOD along with a notebook and a book to read.
