They call this a soft day in Ireland. I am loving the day because I am warm in my magenta fleece jacket and I just set to simmer a vat of tomato sauce. It's been eons since I ate a simple spaghetti supper and I can't wait. I even used my home grown parsley and basil in the sauce along with tomatoes celery carrots black olives olive oil, bay leaves, and red chili peppers. All it needs is time to simmer and a splash of robust red wine for 'age'.
