Baking a Tomato Sauce

I woke up to a rainy day and a desire to make the house smell good since I plan to vacuum. I took out my gigantic blue oval cast iron dutch oven and added a head of chopped celery, and crushed fresh garlic and olive oil. I simmered it on the stove top. Then I added three large cans of crushed tomatoes, a can of tomato paste, 2 bay leaves, red chili flakes, oregano, basil parsley. I put it in the oven. I cubed an eggplant and salted it and let it drain in the sink for an hour. When ready I rinsed off the salt and added it to the hot pot. It's all in one pot in the oven covered at 350 degrees. The house smells great!
