After a 4 mile walk all I wanted was pumpkin waffles and a cup of tea. They came out great. I just added a cup of pumpkin to the regular recipe and a dash more salt and sugar.
1¾ cups whole wheat flour
2 tablespoons granulated sugar (dash more)
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt (dash more)
1¾ cups buttermilk
½ cup corn oil (or 1/4 c)
2 large eggs
2 teaspoons vanilla extract
and
1 cup of pureed pumpkin
