I had leftover raw grated sweet potato and raw grated baking potatoes that needed to be used. I chopped onions and sauteed them in olive oil and added both kinds of grated potatoes. I added Adobo and squirts of sriracha. I added some water to de-glaze the pan. Then I cracked 10 eggs in a bowl and beat them with a splash of milk and shakes of kosher salt. I poured the egg over the potato onion mixture and let it cook briefly on the stove-top and then I transferred it to the broiler to cook the middle and brown the top. It was delicious and even more fantastic eaten cold the next day.
