Added cooked mashed sweet potatoes to my sourdough. We'll see what happens in 48 hours.
UPDATE: The whole wheat sourdough, mashed sweet potatoes (with skins) sunflower seeds, Irish oats and cornmeal, kosher salt, + yeast, made a fabulous bread.
Before baking I tested a blob in the microwave and realized I needed to add more kosher salt to the batter. A great trick.
I baked the 4 loaves at 450 F and the bread is fantastic. Next time I might add raisins or cranberries and the steaming water from the potatoes. (I had already drank it.)
