Rainy Day Miracle Soup

 I am always thinking about my next meal. While walking ROMEO I thought about what to make with this weeks leftovers.  Rainy day soup.

 I had 3 cups of leftover potato+carrot stock from when I pressure cooked potatoes, then I added four wonky cooked apples and four cooked carrots. They cooled off and I buzzed them with the stock in the blender. Then I added leftover mushroom stuffing (toasted pignoli nuts, fresh parsley, garlic, cream cheese + sausage) and stirred it up. It's out of this world. Oh, and a dash of chipotle sauce.
