Waffles

I have been obsessed with making waffles ever since I discovered I could make use of my sourdough starter. I have made pumpkin bran muffin sourdough waffles in the waffle iron which has a 4 minute baking cycle. This is perfect for my short attention span moments. I can clean up the kitchen and get interrupted every 4 minutes to rescue them and bake two more and it works for me. Waffles as defined time.

I also think there's a deep obsession to waffle making. Waffles symbolize some moment lost from my childhood. Happiness. On rare occasions when my step-father was allowed in the kitchen he made us animal shaped pancakes until my mother shut him down. So perhaps I am trying to get this moment back by recreating a moment of happiness in my own house in my own kitchen today, every day.

My husband rebuilt our 1930's antique waffle iron three times. "Now it's a fire hazard. We have to retire it, but we can keep it for decoration. It's still beautiful to look at." We bought a new one, a Calphalon, and we love it.
