Tonight I bought a bag of white potatoes. I had been thinking about mashing them. I took (half the bag) two and a half pounds, and rinsed them and cubed them and put them in the instant pot with a small amount of water to cover the bottom (about 1/4 inch). Then I added a pound of frozen cut leaf spinach and four or five cloves of garlic. I cooked it for 4 minutes and then mashed it with a potato masher. Then I added olive oil, salt, freshly ground black pepper, and sprinkles of Adobo. It was fabulous. Hot green mush! A knish, a dumpling without the pastry.
UPDATE: Today I made it again and had it with fried eggs. It's also good added to soup or just eaten as is.
This was a staple in my home growing up. Sometimes I add an egg or two to hold things together, sprinkle some bread crumbs on top, and bake it.
