Carrot Slaw

grated carrots  (2 pounds)

diced celery (1 bunch)

red onions chopped (2)

raisins (1 cup or more)

(can also add a head of shredded cabbage for the coleslaw variation)

dressing:  red wine vinegar, olive oil, mustard, honey, pickle juice, salt and or Adobo.

let this marinate overnight, the raisins will hydrate and swell and flavors will mingle+mellow
