I made another lasagna. This time I had squash and spinach and basmati brown rice leftover for the first layer, separated by no boil noodles, hummus for the second layer, more no boil noodles, and third layer was my tomato sauce with two slices of Provolone on top. I could have included cottage cheese but ran out of room. I used an 8x8 Pyrex glass baking dish and Barilla noodles. I'd like to make my own fresh noodles and maybe make whole wheat or spinach semolina egg noodles.
