Insecurity and Ingenuity

I have encountered food insecurity several times in my 55 years and it is TRAUMATIC. At the same time I think that with education we can see how the poorest nations of the world have eaten well on rice and vegetables and little bits of meat and fish. There are people in my neighborhood who live off of the convenience stores and FAMILY DOLLAR which means they never get fresh vegetables or fresh fruit. My Southeast Asian neighbors are ingenious in using solar power to dry their chicken and beef in green netted baskets hanging off their fire escapes. They plant gardens next to their cars. They make use of everything they have.
