Rainy Day Lentil Soup

1 pound rinsed lentils

1 whole head of celery, chopped

3 onions, sliced

5 cloves of garlic, smashed and peeled

knob of ginger (toss it in)

Carlo Rossi Chianti (a cup)

4 or 5 large carrots, chopped

2 chicken bouillon cubes

vegetable stock and or water

3 cans of tomatoes

1/2 cup olive oil

2 large  white potatoes, cubed

2-3 tablespoons red wine vinegar

I made this in my Instant Pot and set it for 30 minutes. I added everything at once and hit the button (like doing laundry!) It was delicious and tasted like it cooked all day. I fished out the ginger root after it cooled. The recipe can be halved for smaller pots. You can make this on the stove easily or bake it in the oven. Be sure to cool it down completely before refrigerating (important food safety). It's delicious.
