Meatballs: My own Fast Food

I am not patient. I am always hungry. I am always baking and cooking. I prepare food in advance so that I can zap small portions in the microwave and have a meal pronto.

We have the worlds best butcher in Woonsocket RI. You can buy affordable fresh meats and freeze the extra. Nobody goes hungry in my orbit. I met a woman in the park who used to live in the neighborhood. She was waiting for the free lunch truck. There was no sign of it. Would you like to come over? I'll feed you, I said.

Ingredients

1 lb ground beef
2 eggs
1⁄4 cup milk
1⁄2 cup breadcrumbs
1⁄2 teaspoon salt
1 tablespoon fresh parsley
1 teaspoon garlic powder
1⁄2 teaspoon fresh ground pepper
1⁄2 cup grated locatelli cheese


Directions

Mix all ingredients in a large bowl by hand.
Use your bare hands for best results.
Roll meatballs to about the size of a golf ball. (wet your hands to prevent the meat from sticking to them while rolling the meat balls).
Drop raw meatballs into large (I use a stock pot) pot of sauce.

Simmer for about 3 hours.

Ingredients


2 (28 ounce) cans tomato puree
1 (28 ounce) canpeeled plum tomatoes
2 cloves garlic
1 small onion, diced
6 cloves
1 teaspoon basil
1 teaspoon kosher salt
1⁄4 teaspoon fresh ground pepper
2 tablespoons sugar
1⁄4 cup extra virgin olive oil
1⁄4 cup grated cheese

Directions

In a large pot, sauté onion and garlic in olive oil.
Empty plum tomatoes into large bowl and squash with your hands.
Add all ingredients (including any meatballs or sausage you want to add) to pot and simmer for 3 hours.
