Six Loaves

Six loaves of sourdough are rising in loaf pans in my cold oven. I mixed up the dough yesterday morning using oat groats, coarse cornmeal, wheat berries, whole wheat flour, rye flour, and bread flour. With the warm weather the dough rose rapidly. I punched it down and refrigerated it. It continued to rise. I punched it down again before bed and kept it in the fridge overnight.

This morning I greased six loaf pans and shaped the dough into balls the size of navel oranges. There are two in each pan rising again. When they have doubled in size I will bake them at 450 F for 35 minutes.

I love shaping the dough, and the scent of it baking. I never tire of the drama of bread.
