Today I made hummus. I pressure cooked a pound of chick peas a few days ago and was saving them in their precious liquid in the fridge. The way I make hummus is I put tahini and freshly squeezed lemon juice from 3 to 4 lemons into the Cuisinart and puree it until it blooms like a mayonnaise. Then I add the 3 cloves of garlic*. Then I add salt and the pressure cooked chickpeas and puree it all again saving the precious chick pea cooking liquid to add as I go along. Finally I sprinkle a dash of ground cumin (not too much or it can cause bitterness).
Delicious!
