8 Pumpkin Pies

My husband loves pumpkin pie and he brings a piece with him to work every day. We planned to make more pies tonight. Today when doubling the pie recipe I made a mistake so rather than waste any ingredients I compensated by quadrupling the recipe. Luckily we had the ingredients on hand along with the pie pans and space in the oven. We now have 6 mini pies, a medium pie and a large pie baking in the oven. When they cool we'll freeze all of them except for one.
