I saw the sweet potatoes on my kitchen counter. I was in the mood for porridge but wanted vegetables. This is like a vegetable porridge.
Chop sweet potatoes into cubes (keep the skins on) and steam or add to instant pot with minimal water (1/4 inch). Add frozen chopped spinach. Cook for 3 minutes in the instant pot. Quick vent. Meanwhile saute onions in olive oil until translucent or browned. Then add the sweet potato spinach mixture. Add Adobo seasoning. Enjoy.
Leftovers can be used in a soup or an omelette.
