My mum's pizzelle salate (olive oil and wine waffles)
“Pizzelle are waffle
cookies that are typically found in Abruzzo. They’re generally sweet,
but this savoury version is quite popular in my mum’s village,
Torricella Peligna” - Silvia Colloca.
Ingredients (4)
- 3/4 cup (180ml) extra virgin olive oil
- 3/4 cup (180ml) white wine
- 1 1/3 cups (200g) plain flour
- Charcuterie (such as mortadella & culatello), pecorino, micro herbs & olives, to serve
Method

1.Place the olive oil and wine in a large bowl and whisk gently to combine. Gradually add the flour, whisking well to form a smooth batter (similar to a thick pancake batter).

2.Preheat and lightly grease a pizzelle or waffle iron over medium heat. Place 2 tbs batter in the iron (use double the amount of batter if you’re using a waffle iron), spread with a spatula and close the lid. Scrape away any excess batter that oozes out of the edges of the iron. Cook for 2-3 minutes or until golden. Turn and cook for a further 2-3 minutes or until both sides are golden. If you’re using a waffle machine, close the lid and cook for 8-10 minutes or until both sides are golden and the pizzelle is crisp. As they cool down they will go slightly crunchy.

3.Serve with a selection of cold cuts of meat, pecorino and olives.
