I mixed up waffle batter again last night and this time I didn't measure. They are kooky. I used eggs, buttermilk, buckwheat flour, dried coconut flakes, dried cranberries, figs chopped to raisin sized bites, salt baking soda, corn oil, pumpkin puree or applesauce or mashed banana, whole wheat sourdough starter, coarse cornmeal, oat groats, and more wheat flour to thicken. I let it sit overnight in the fridge to soften the grains. They are easy to carry around and eat especially if you like them warm and plain, like I do.
You can use Bob's Red Mill wholegrain cereal mix or King Arthur's or do what I do: make and grind your own.
You can use poppy seeds, flax, brown rice, rye, barley, buckwheat, malted barley from beer store, you name it.
