Squinting Potato Casserole
The five pound bag of potatoes were squinting their sprouting eyes at me. So I chopped them thin along with a few onions and layered them in a casserole dish. I made a roux that I poured over it. Now two trays of scalloped potatoes are baking while the zero degree winds whistle against the house. The scent is re-creating home, taming my angry cabin-fever mood.
