Apple Pie

I wanted to bake an apple pie this week and I just did! It's cooling off. I made my friend Susan Olsen's corn oil crust and I sliced the apples from Cook's Valley Farm. I wanted apple pie for dinner because apple pie is food. We seasoned the sliced Empire apples with cinnamon ginger cornstarch salt and sugar. I used a shallow bowl to mix the flour with corn oil and ice water. I rolled out the dough between 2 pieces of waxed paper on my cold enamel tabletop. I spritzed under the paper to make the paper stick. My dog Romeo was right beside me catching the accidental bits. We baked it hot in a preheated 450 oven until the rim of the pie started to brown. Then we lowered the temp to 350.

3 cups flour
pinches of kosher salt
3 fluid ounces ice water
2/3 cup corn oil

wax paper
shallow bowl, spatula, rolling pin, flat surface,
apples, cinnamon, ginger, corn starch, flour, salt
