Spinach Pie

I think it's important to learn to make your favorite foods. One of my favorites is spinach pie. Last night I made a bunch of them from a multigrain sourdough I set to rise earlier in the day. At suppertime I defrosted 2 pounds of frozen spinach and chopped 2 cans worth of black olives and added olive oil, fresh garlic, kosher salt and chili flakes. I spooned a hot heap of green onto a circle of flattened dough and folded it to make a pocket. I sealed it and brushed it with a beaten egg. I baked them in a preheated 450 degree oven for 25 minutes. They taste even better today!
