The Best Cornmeal Pancakes

3/4 cup Indian Head stone ground yellow cornmeal

3/4 cup of dark rye flour (or whole wheat or a blend)

2 Tbsp granulated sugar

1/2 tsp baking powder

1/2 teaspoon regular salt

1/2 teaspoon baking soda

1 1/4 cups of buttermilk or yogurt (homemade?!)

3 Tbsp corn oil

2 eggs beaten 

Mix wet and mix dry then combine. We use a Hoover electric Frying pan from 1950 to make the pancakes. They didn't just make vacuum cleaners.

These are delicious and portable. We make them for breakfast lunch or a simple supper.
