Kale & White Bean Soup

I made a fantastic soup. First I overnight soaked and then pressure cooked a pound of navy beans and set them aside. Then I chopped 5 unpeeled full length carrots, chopped 3 medium large white onions, smashed and peeled a bulb of garlic,  3 bunches of kale triple washed and chopped, 3 stalks of celery chopped, 3 glugs of Chianti.  I pressure cooked this for a few minutes. Then I added olive oil, soy sauce, 2 chicken bullion cubes dissolved in a pint of water, the cooked navy beans and sliced MICHAEL'S hot chourico sausage made locally in Fall River, and finally a can of whole peeled tomatoes. The soup came out so good that we both had seconds.

I deliberately cooked things for short separate spells and added them together later so they would keep their individual flavors. Normally I load the soup pot like a load of wash and just cook it all at once but then the greens are overcooked and the sausage is diluted and the beans disintegrate. That's okay too but today's method was AMAZING and worth repeating.

We buy the sausage and produce and all of our groceries at our local market, PRICE RITE.
