18 Degree Soup

It was so cold yesterday that even my dog begged for a shorter walk. When I opened the fridge to get the milk for my morning coffee the vegetables were all shouting at me. I told them please wait until later, and shut the door. After my swim I was cold and hungry and thinking about supper.

I skimmed the fat off of the turkey stock and added the remaining gelatin to the stock pot with a gallon of water. I added a full bunch of wilted celery rinsed and trimmed. I rinsed and chopped three bunches of kale. When that cooked down I added a pound of carrots rinsed and sliced into coins. I added potatoes scrubbed and sliced thin. I added a pound of mushrooms rinsed and sliced thin. Then I added lots of olive oil, 5 cubes of chicken bullion, more salt, a dash of cheap port, a few red chili flakes, a three inch piece of fresh ginger root roughly sliced, and a bulb of smashed and peeled fresh garlic cloves. When I make soup it looks like wet laundry but it is delicious to eat.
