Mashed

The Russet potatoes hanging in the mesh bag inside the cellar started sprouting eyes. They've all been watching me ignore them, until now. I scrubbed them and carved their eyes out and chopped the potatoes up into one inch cubes! I just pressure cooked them for 5 minutes in a shallow amount of water. I mashed them with pinches of kosher salt and the potatoes drank up the cooking water. The taste test became a meal: I added olive oil and marinated artichoke hearts and some of the marinade and granulated garlic and more salt. It's amazing.
