I found out the hard way that without my swim I get very grouchy and edgy. So last night I tried the Lincoln YMCA outdoor Olympic pool. This is one of three outdoor pools. Because it was so late in the day sunburn was less of an issue. I met two women swimmers who were loving the fresh air and cool water as much as me. I hope the pool stays open through September. Imagine lights for swimming at night!
We tried to duplicate Marcus' BBQ + Pressure cooked St. Louis ribs and bought a slab of spare ribs at Pricerite and gave it the dry rub with Steve's Cajun spice. A few hours later we grilled them and caused a grease fire. We switched to medium to prevent a flare up and then we pressure cooked them for 30 minutes in an inch of pineapple juice.
They were delicious. I can't eat rich foods without a boat load of coffee to prevent stomach aches. I am lacking acidity enzymes in my stomach so I have to manually make up for it. This explains why gallbladder removal runs in my family, my grandfather and mother both had it. This is something I wish to avoid. Luckily I get the "too rich" signal loud and clear! So I had 2 mugs of hot coffee to wash down the ribs avoiding pain. And swimming gave me a real sleep.
Today I meet with Dawn the Saint Germain chef about making four Key Lime Pies for her peeps. I'd better hurry before I turn back into a pumpkin. My energy is fast and huge and seasonal. It will retreat for the fall.
