Buttermilk Pumpkin Waffles
Ingredients
- 1 1/4 cup whole wheat flour
- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 ground cloves
- 2 large eggs, room temperature
- 1 1/4 cups buttermilk
- 1/2 cup pumpkin puree

2 tablespoons unsalted butter, melted.*(or corn oil)
- To serve: butter and maple syrup
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, ginger, baking soda, salt, and cloves.
- In a medium bowl, whisk together the eggs, buttermilk, pumpkin puree, and melted butter* (or corn oil)
- Add the wet ingredients to the dry ingredients. Mix until just combined.
- Cook each waffle until golden in a preheated waffle maker, following your manufacturer's instructions.
- Serve waffles with butter and maple syrup.
