Sweet Potato with Miso Tahini Butter
Ingredients
- 1 (340g) medium sweet potatoes, skin on
- 2 tablespoons unsalted butter, room temperature
- 1 teaspoon miso paste
- 2 teaspoons tahini
- 1 teaspoon sesame seeds
Preparation
- Prick
sweet potatoes all over with a fork, and place in the Anyday dish. If
too thick, cut in half lengthwise (like a baked potato). Cover with the
lid (knob lifted).
- Cook in the microwave for 7 minutes, until the sweet potatoes are tender when pierced with a fork.
- In
a separate bowl, mix the butter, miso, and tahini until well
incorporated. It’s easiest to do this when the butter is very soft at
room temperature!
- Remove the sweet potatoes, cut partially in
half lengthwise, and add a spoonful of miso tahini butter in the center.
Garnish with sesame seeds and serve.
Serving suggestions & tips
- Try substituting tahini with cashew butter.
