Sweet Potato with Miso Tahini Butter

Ingredients

  • 1 (340g) medium sweet potatoes, skin on
  • 2 tablespoons unsalted butter, room temperature
  • 1 teaspoon miso paste
  • 2 teaspoons tahini
  • 1 teaspoon sesame seeds

Preparation

  1. Prick sweet potatoes all over with a fork, and place in the Anyday dish. If too thick, cut in half lengthwise (like a baked potato). Cover with the lid (knob lifted).
  2. Cook in the microwave for 7 minutes, until the sweet potatoes are tender when pierced with a fork.
  3. In a separate bowl, mix the butter, miso, and tahini until well incorporated. It’s easiest to do this when the butter is very soft at room temperature!
  4. Remove the sweet potatoes, cut partially in half lengthwise, and add a spoonful of miso tahini butter in the center. Garnish with sesame seeds and serve.

Serving suggestions & tips

  • Try substituting tahini with cashew butter.
