Homemade Hummus

Soak 1 pound chick peas overnight or flash plump them by boiling and resting them for an hour. Then pressure cook for 18-30 minutes or boil for an hour. Save liquid. Juice 3-4 lemons. Blend a cup of sesame tahini, the fresh lemon juice and 6-8 fresh cored garlic cloves in a food processor. Add the cooked chick peas and some of the liquid as needed. Add kosher salt, some cumin and a bit of chipotle. Enjoy with carrots lettuce you name it....
