I added fresh basil and bean water to the 4 eggs 3 cups of semolina flour. So far it's been a disaster using the extruder. Everything stuck. So we took out the hand cranked Atlas machine and the dough is behaving. We also took out the clothes rack for drying the fettucini dough. I'm exhausted and crabby. This better taste good! Next time no additional water.
We took a long walk and forgot about the frustrations of the kitchen. When we came home at 7PM we boiled water and cooked the dried home made pasta for 1 minute in salted water and then added olive oil, fresh tomatoes, sliced red onions olives and salt and pepper. It was divine!
