Baby Leeks and Pea Shoots

My friend KC belongs to an organic farm share. Today she gave me a bunch of baby leeks and a big bag of pea shoots. I never had a pea shoot. I munched on them raw. I poked around for some ideas and then jumped in to make supper.

I chopped the baby leeks (the whole plant chopped except the roots) and sauteed them with fresh garlic in olive oil. I added diced carrots. I grated some fresh (frozen) ginger root. I added a splash of toasted sesame oil. I sprinkled it all with some soy sauce and a splash of Chianti (for sweetness). Then I added the pea shoots into the mix for a quick toss to steam. 

We ate the veggies on top of freshly cooked millet with some red lentils cooked and seasoned with Adobo, olive oil and cumin. The millet was cooked in a metal bowl resting on top of the lentils & water so they could be pressure cooked at the same time! The millet and lentils were ready in 20 minutes.

Delicious! I might turn the leftovers into a soup.
