Since a ten pound bag of Idaho Russet potatoes is cheaper than a five pound bag (almost). I am making these. I pressure cooked the potatoes whole first and smashed oiled seasoned and now baking. Smells great.
We took my friend Nancy to Urgent Care in Bellingham MA down the street. What a fabulous operation they have. We sat and talked about potatoes and books while waiting. It was fun.
