We had leftover steamed vegetables: cubed potatoes, sliced carrots and broccoli florets. I also had leftover egg salad with raw onion. I decided to combine them making a delicious colorful potato salad.
I liked it so much that I might make this potato salad on purpose someday and deliberately include cooked sliced carrots and broccoli florets (and raw onion).
I also added Cholula hot sauces (the red and the green).
(potatoes cubed extra small so they would cook with carrots +broc without overcooking the broccoli. 3 minutes IP quick release.)
