Grilled Eggplant: Love the Leftovers

I am convinced everything tastes better the next day when the flavors have come back down and landed on the food. I just had leftover grilled eggplant. Since I grilled the slices lengthwise they were like wraps. I warmed them and filled them with my cold German potato salad. A perfect lunch on a 90 degree day.
