Roasted Eggplant on Toast: My New Naked Friend

Eggplant salted rinsed dried grilled with olive oil is now my new naked friend. Delicious on my homemade bread toasted. Mr. Eggplant does not need more than olive oil and salt to be perfect! Why have we always covered you in sauce and doused you with cheese? You are best eaten naked, roasted with olive oil and decorated with salt.
