Ten Pounds of Red Potatoes, Salad.
I noticed my potatoes needed to be turned into something, fast. They were begining to sprout eyes. So I washed them and started chopping off the eyes and then cubing them. I filled my pressure cooker to the top and added a dressing of water up to the steamer tray, 4 TBs mustard, a cup of olive oil, a cup of red wine vinegar, 4 Tbs sriracha rooster hot sauce, 1 Tbs kosher salt and 1 Tbs sugar. After 5 minutes of pressure they were done. The flavor gets even better after it cools off overnight in the fridge. Usually I add celery and onions to the recipe but there was no room on this batch. I am going to pour off some of the liquid and pressure cook chopped celery in it with fresh raw red onions and add it all together in time for lunch.
