cook bow-tie pasta 4 min (instant pot) or 8 min regular boil. w/ salt and olive oil. DRAIN in sink
meanwhile chop onions and garlic and saute in olive oil w/ dried red chili pepper flakes
chop the mushrooms and add them.
add splash of stock, or water or wine to deglaze the pan.
add spinach leaves and they will wilt immediately wilt.
serve over hot pasta
sprinkle with kosher salt and fresh ground pepper
