I Love Jaques!

We stayed up to watch the President speak but we still had to get up at 4 AM. So after supper we were weary from only five and a half hours of sleep. As a bedtime story we watched Jaques Pepin on TV. Jaques was taking all the bones out of a chicken while leaving the skin in tact. In his experienced hands it looked like a magic trick. After removing all of the chicken bones he laid the carcass down on the cutting board. It looked like a jacket for a doll or the way kindergarteners put on their coats. Then he wrapped the chicken around a garlic spinach mixture he made and held it all together with twists of butcher's twine. His daughter and grand daughter were by his side toasting with glasses of wine. Tears came to my eyes. I love Jaques!
