My third day of cracker making. This is recipe trial number three. I improvised off the recipe below and then I also added ground sunflower seeds, flax and a Tablespoon of sweetened condensed milk, caraway seeds...black pepper, garlic powder, granulated onion, flax seed, poppy seeds...olive oil in place of butter. I added extra kosher salt...Yes I did a raw taste test! And it was sooo good. Lots of salt to counter the oily seeds! They are excellent! I used a rolling pin and parchment paper and a silicone mat for baking. I had a pastry scoring wheel for making stamp edges. The trick is making the center just as thin as the edges. Grated Asiago would be good on one batch.

- 1 cup (200 g) sourdough discard (unfed sourdough starter)
- 1/2 cup (56 g) rye flour, see notes
- 1/2 cup (56 g) all-purpose flour
- 1 teaspoon (3 g) kosher salt (or 1/2 teaspoon if you are sensitive to salt)
- 4 tablespoons (57g) unsalted butter, room temperature
- olive oil, for brushing
- flaky sea salt for sprinkling or sesame seeds or everything bagel seasoning
