Boiling Potatoes
I'm boiling 5 pounds of quartered white potatoes in my slow cooker. I added my friend Adobo and kosher salt. I will save the potato-water for my bread dough. I will hand mash the potatoes with (joblot) extra virgin olive oil and garlic powder. This is food we live on. Warm the mashed potatoes and place them on a bed of baby spinach. You will feel like a Queen. I've eaten this for breakfast, lunch or dinner many times. Red onion, oil-cured olives and avocado are great additions. We buy them all at Price Rite. You can substitute sweet potato, yuca, or cauliflower for the potatoes.
