Australian Lemon Yoghurt Cake

I am listening to radio Quebec Classique. I found a recipe for banana meatballs! and curry banana meatballs.

Australian Lemon Yoghurt Cake

1 bowl

Ingredients

1 3/4 cups sugar (I will use MUCH LESS)
2 eggs
1/2 tsp salt
3 tsp lemon juice
2 lemons grated
3/4 cup oil
1 cup natural yoghurt
2 cup self-raising flour (I will use whole wheat with baking powder added)*
*Self-rising flour is a combination of all-purpose flour, baking powder, and salt. Chances are high that you already have those staples in your pantry already too. The blend is typically comprised of 1 cup of all-purpose flour plus 1 1/2 teaspoons baking powder and 1/4 teaspoon fine salt.

Method

STEP 1 In a bowl, mix rind, oil, eggs and sugar with a fork.
STEP 2 Add remaining ingredients and combine well.
STEP 3 Pour into greased ring tin and bake at 180C (350f) for 30 minutes.
STEP 4 Leave to cool then turn out and dust with icing sugar.

Notes

I like to cook this in a square tin because we quite like it a little "undercooked" in the middle. Flavoured yoghurt can be used.
