Summer Means Salads

Summer for me means big lazy salads; tricolor pasta salad with homemade Italian dressing, German potato salad and buttermilk coleslaw modeled after Marion Cunningham's recipe. I also soak red kidney garbanzo black beans and pressure cook them for adding to the salads.
I have made these salads so many times that I now make them without a recipe just riffing off the original recipe. For my German potato salad I added the three leftover smoked ribs instead of my olive oil which originally replaced bacon. Cooking on principle is educated improvisation.
