The Breaker's Key Lime Pie

5 tablespoons vegetable shortening
7 tablespoons cake flour
2 tablespoons sugar
1/4 teaspoon salt
1 egg
3 tablespoons skim milk
FILLING:
3 egg yolks
5 ounces Key lime juice
2 cans sweetened condensed milk
1 cup whipped creamPIE CRUST: Mix all ingredients by hand in a mixing bowl. Shape the dough into a
ball. Roll dough out using a floured rolling pin and fit into a 9" pie plate.
Prick with a fork around bottom and sides.
Bake at 375 F for 12-15 minutes until light brown.
FILLING: Mix egg yolks, lime juice, and condensed milk with an electric mixer
until smooth and creamy.
Pour into prebaked pie shell and bake for an additional 15 minutes at 350~.
Allow pie to cool.
