I love spinach perhaps even more than Popeye the Sailor ever did. Last night for a quick supper for two I defrosted 3/4 pound bag of frozen spinach and added olive oil, Adobo, garlic powder, 2 slices of Pepper Jack cheese and 4 eggs. I cooked them in a frying pan. Then I placed green pimento olives on top for an edible garnish. It was so delicious I wanted to be sure to write it down. I might want to make it again tonight!
