Ecuadoran Lunch at my Students Home

I had a special treat yesterday. My student and her husband and brother and two sons had dinner with us at her home. She made Llapingachos (Ecuadorean Potato Pancakes) with butter and eggs mashed and mozzarella inside, rice and red onion and tomato salad, and fried plantains in coconut oil and stir fried seasoned beef strips. I brought my homemade wine cookies shaped like stars. They loved them. She sent me home with food for Bill to enjoy. He loved it too! Now I want to duplicate these foods at home. She buys her beef in Milford and everything else at BJ's.
