Pizza Crackers

Inspired by pepper biscuits I made a dough that is flour, kosher salt and coarse cornmeal, Fleishmann's instant yeast, olive oil, some favorite herbs: fennel, cayenne, garlic, and oregano. I taste the dough to adjust seasonings. I mix and let rest. Then I stretch them thin and bake them in greased pie pans or cast iron skillets. When they cool they are crackers.
