Potato: A Taste Memory

I have made Chef Michael Smiths crisped potatoes four times in the two weeks since I learned about them. I have had taste-flashbacks: potato knishes on Brighton Beach with Grandma Sophie, and crinkly fries at Nathan's at Coney Island. We never ate potatoes in Larchmont. According to my mother potatoes, and beans were the enemy. Not sour cream, beef, pork, and cheese. (laugh)
